
Even in drizzly Belgium the weather gods are in a good mood these days, so I go for a light snack. This dipping sauce is great company for a glass of rosé or sparkling wine!
A friend of mine gave the idea of using mascarpone for a dipping sauce. This soft Italian cream cheese is well-known as one of the ingredients of tiramisu. But you can also use it for snacks.
Mix 5 tablespoons of mascarpone with 1 tablespoon of mayonnaise. I only use a little bit of mayonnaise because it tends to tastes too greasy, but of course you can change the proportions.
Add a little bit of lemon juice, pepper and salt & give the sauce a good stir. Then you can add all sorts of herbs (parsley, basil, chives, coriander,…). Spring onions also make a perfect match.
The result is a fresh dipping sauce that you can serve with potato chips or toasted bread. It tastes light, but don’t be fooled, mascarpone is what I call a “straight to the hips”-calorie bomb! But hey, every now and then the taste of it is worth the extra calories! And…If you want a low fat version you can use ricotta in stead of mascarpone.
